Not only is the Fourth of July America’s birthday, there is another birthday of equal importance in my family: My Mom’s! Now that we are living closer to her again, I wanted to make a special treat for her. She’s dieting, so I didn’t want to go all out on a chocolate cake with mounds of frosting, so I was actually inspired by a dessert that my mom used to make when we were younger. She’d make a huge chocolate chip cookie in the shape of a pizza and add dessert sauces and walnuts. I decided to try my own spin with a Sugar Cookie Pizza, Cream Cheese Frosting “Sauce” and Strawberries and Blueberries for the toppings.
Sugar Cookie Fruit Pizza
1 pkg Pillsbury Refrigerated Sugar Cookie Dough
8 oz Cream Cheese
1/2 cup Powdered Sugar
1 tbsp Butter
1. Preheat your oven to 350. Roll out cookie dough onto pan or stone. It’s easiest to use your hands. Make sure to leave room at the edges, as it will grow when cooking. Bake cookie for about 13 minutes. Don’t overbake, cookie should not brown.
2. Whip together cream cheese, powdered sugar and butter. Make sure to cool cookie completely before frosting.
3. Slice strawberries and decorate with both strawberries and blueberries. Feel free to add other fruit, I just went for the American look.
