Easy Slow Cooker Triple Berry Cobbler Recipe!

It’s still really cold in Chicago, so I wanted to make a delicious, warm dessert to enjoy this evening.  I’m a big fan of looking for ‘Pinspiration’ and then throwing together my own recipe with whatever I have around the house.  Today, I decided to make an easy Triple Berry Cobbler in my Crock-Pot!

  • 2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 eggs, lightly beaten
  • 1/2 cup milk (I used 2%)
  • 1/3 cup vegetable oil
  • 3-4 cups mixed berries
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon flour

Start by mixing together the first four ingredients (the dry ingredients).

Add the eggs, milk and vegetable oil into the dry mix and fold together.  It will be thick and look dry.  It’s cobbler, you want it crumbly. =)

Grease your Crock-Pot so it doesn’t stick.  Press the dough into the bottom of the Crock-Pot.  I have a 5-qt Crock-Pot.
Put the berries on top.  I used blackberries, blueberries and quartered strawberries, but you can use anything!
Mix together the last three ingredients (sugar, salt and flour) and toss it over the fruit.
Cook on high for about 2 hours (or until a toothpick inserted in the middle comes out clean).  Turn the Crock-Pot off and let cool for 5-10 minutes.  This allows the berry sauce to thicken up.  I served ours with vanilla ice cream and whipped cream! It was absolutely delicious and everyone in the house loved it!
It’s a super simple recipe and only took me about 15 minutes to get everything together before I set the Crock-Pot to cook.  Recipes like this normally thicken up with time, so I can’t wait to try it again tomorrow!
